Warm Fava Bean and Chanterelle Salad with Poached Eggs Recipe

INGREDIENTS

INSTRUCTIONS

  1. Bring heavily salted water in a medium saucepan to a boil over high heat. Prepare an ice water bath by filling a large bowl halfway with ice and water; set aside.
  2. Remove fava beans from their pods. Boil favas in the salted water until the bean inside the outer skin is bright green and firm but not hard, about 1 to 2 minutes. Using a slotted spoon, transfer favas to ice bath to cool. Reserve fava cooking water. Peel the light green outer skin from each bean to reveal two bright green inner halves; discard skins. Place beans in a medium bowl; set aside.
  3. Return water to a boil over high heat. Add potatoes, reduce heat to medium, and simmer until knife tender, about 5 minutes. Drain potatoes and place in bowl with favas. Add lemon juice and mustard and stir to combine. Season to taste with kosher salt and freshly ground black pepper; set aside.
  4. Heat oil in a large frying pan over medium heat until shimmering. Add shallot and sauté until softened, about 3 minutes. Increase heat to high, add mushrooms and a pinch of salt, and cook, stirring occasionally, until mushrooms are tender and brown around the edges, about 3 to 5 minutes. Season with pepper and more salt. Add favas and potatoes, stir to combine, and cook until heated through and moisture in the pan has evaporated, about 1 minute.
  5. Remove pan from heat and season mixture with salt and pepper. Divide among four plates, top each with a soft-poached egg, and sprinkle with chives.

President's Report

Greetings NACE Professionals!

I was just reflecting on all of the wonderful meetings we have had leading up to this beautiful Spring.  I am so proud of this BOD and the new committee members.   We have had some top quality programs with excellent attendence ranging from 75 to 100 people all year.  It is a great vibe right now so if you've been absent - come soon.  There are many new professionals "checking NACE out" and eight new active full time members we've acquired during the Membership Drive.  Let's keep it going strong the second half of the year.

We just concluded our 8th Annual Education Conference at the Minneapolis Hilton on April 7.  We again packed in a full day of topics ranging from social media to weddings, threw in some operations for good measure like buffet building and a Chef's panel, then rounded it with sales topics like networking and upselling.  It was a well rounded day for all industry professionals.  As usual the Hilton (in particular John Luke-GM, Executive Chef Julian Grainger and Kathy Roberts-DOC and Past President) played gracious and doting hosts to our organization.  This, despite the fact  they had some small fundraising dinner with Sarah Palin for 900 people the same night (shhh!).  Don't worry, I can assure you that our NACE event with our usual special requests and twists was way more challenging than that little VIP event. Quite seriously, thank you most sincerely, for another successful conference Hilton.  We are also appreciative of all of the talented sponsors and speakers who contributed their time to a fantastic day!  Sidenote - NACE National has asked we contribute an article to the May National newsletter on the conference. We will gladly comply and bring exposure to our fine Twin Cities Chapter.

Allow me to recognize again this year's board of directors.  This is a voluteer group of people who make this association tick.  Remember, it is an election year.  Fun and dedicated people wanted for the 2011-2012 Board!!!
