Recipe of the Month
Grilled Chicken Pasta Salad With Carmelized Onion And Mango
Ready in: 30-60 minutes
Difficulty:   3 (1=easiest :: hardest=5)

Serves/Makes:   4

Ingredients:
2 tablespoons extra virgin olive oil
1/2 cup onion, finely chopped
8 ounces Campanelle pasta noodles
2 cups grilledchicken breast, cubed
1 red bell pepper, diced
1 cup zucchini, quartered
2 cups broccoli florets
1 mango, peeled and cubed
8 ounces zesty Italian dressing
1/4 teaspoon Kosher salt

Directions:

Heat oil in a large skilled over medium heat. Saute onions for 5 minutes then reduce heat to low and cook until golden. Let cool for 10 min­utes.

Cook pasta according to directions on the box. Drain pasta and place in a large bowl. Add the onions and toss in remaining ingredients, gently stirring to coat.

Cover and refrigerate at least 30 minutes before serving.

President's Report

Dear NACE Colleagues,

I know your minds are restless and filled with summer, but I do have some things to share with you.  Four of us were able to attend the National NACE Conference in Charlotte a few weeks ago.  It was a great display by the Charlotte Chapter at the Westin Hotel.  I witnessed true NACE camaraderie as the Triangle and Atlanta Chapters (among others), assisted the Charlotte Chapter to make it all happen.  I heard stories of attendees from Atlanta packing their cars to the brim and hauling props for miles to help out.  They then worked to set up events alongside their Charlotte neighbors.  How cool is that?  Very cool - but not surprising.  That is the warmth and loyalty that is displayed often in our association on a local and National level.  National raised the bar this year with the breakout educational seminars and we took a few ideas for our local conference we are outlining currently.  At our next meeting on September 2nd, we will bring you the newest catering and decor trends from the conference.  We hope to have more of a Twin Cities contingency next summer's conference which they announced will be in Austin, Texas! 

I must do a shout out for the last NACE meeting at Loring Park Community Center.  Sorry to those who missed out as there were new ideas and some serious inspiration.  Hosted by Prom Catering, along with Festivities as the decor partner and presenters of the "Outside-Inside Reversal" topic, it was a superb demonstration of food and decor working together in harmony.  The night was a glorious in the park and event was gorgeous.  Prom really showed us why they are a nationally renown caterer and a leader with off premise food displays.  Festivities, under new ownership, is truly a jewel in the decor world.  Watch out for that company - they have big talent, big experience and big dreams.  They are going to be grander than ever.  On behalf of NACE, I want to thank those in the front and behind the scenes from Prom, Owners - Bill & Tom Given, Chuck Wilczyk - Executive Chef and his team, Carolina Lorenze - Sales Manager, Leah Thomas and Tony Stoffel and their wonderful operations team.  It was impressive! On the Festivities side, I need to thank owner and presenter, Jennifer Braun, Co-owner - Matt Johnson, Heather Farrier, Kathy Swart, Erin Brown and Ryan Kettnacker .  Lastly I need to express how appreciative we are to Susan Austin of Austin Images Photography.  She is at every NACE event taking photos and giving of her time and talents to the association. Thank you Susan Austin!  Thank you Prom and Festivities!   

I am going to highlight at least one benefit of being involved in our association each month.  This month, check out NACE-TV at www.nace.net.  It is something National has just gotten off the ground and it is fabulous.  On a local level - a reminder that we put classified ads on our website.  If you need to fill a position let me know and we will post it.  Did you know that monthly, our newsletter goes out to over 1000 people and we are averaging 800 hits on our website?  It is a great opportunity to advertise to our group if you want to spread the word about a position or promotional event you are involved in! 

Finally, we will be sending out RFP's for the 2010 meetings soon.  All 2009 meeting locations are set!  Thanks 2009 hosts.

What has made us the beverage and ice experts since 1945?  Attention to detail.

Jack Kelly believed the market was ripe for tapping: Expand the beverage choice available to the local bars and restaurants. With this vision, Jack founded his company in 1945, which he called Carbonic Machines.  Established in Old Town Minneapolis, Jack initially developed three distinctive post-mix syrups. He placed his White Soda, Quinine and Tom Collins in gallon jugs and sold them fresh to local establishments.  To offer a more complete beverage package, Jack also delivered Coca-Cola? and CO2. To add ice to the mix, Jack sold ice machines. In fact, it was Jack who sold the very first commercial ice machine in Minnesota as the Scotsman? distributor.  To support his beverage business, Jack added a service branch, CMI Refrigeration. In the late 1960s, Jack continued to expand with Ace Ice, which initially produced about 3,000 lbs. of ice daily.  Jack sold the business to his sons and retired in 1982. During the last quarter century, David and Steven Kelly have made extensive changes to the business. Yet Jack's vision of providing friendly, individualized service and product value to customers remains to this very day.  Today, the company's operations are located just one block from where Jack first started. The business names Jack created still remain, under the umbrella desig- nation of the Shamrock Group.  Cruise down any Twin Cities highway and you're bound to see a well maintained Shamrock Group truck. Recognized throughout the region as a beverage and ice expert, the Shamrock Group produces well over 100 different post-mix flavors, 50 tons of ice daily and maintains a fleet of 26 service and delivery trucks.
