Recipe of the Month

Ginger-Pear Sorbet
Yes, it's a tempting dessert, but consider serving it between the first course
and the turkey to refresh the palate.

  • 6 pears, peeled and halved
  • 2 1/2 cups sweet wine
  • 1 cup simple syrup
  • 1/2 cup water
  • 2 quarter sized knobs of ginger, smashed
  • 1 1/2-inch orange peel
  • 1 1/2-inch lemon peel
  • 1 small cinnamon stick
  • pinch salt
  • 2 tablespoons lemon juice

Place all ingredients in a non-aluminium pot. Heat to a simmer. Simmer covered for 20 minutes or until pears are tender. Remove pears to a plate and continue reducing the liquid until so very slightly syrupy. Remove from heat. When cool, remove ginger knobs, and cinnamon stick. Return pears to syrup, puree and chill. Freeze in an ice cream machine according to manufacturer's directions. (Recipe courtesy Chef Hallie Harron)

President's Report

Dear Fellow NACE Supporters,

It is my deepest hope that all of you are enjoying some of the things that are near and dear to event professional's hearts - barbecues, picnics and perfectly blended summer drinks (that hopefully you are not catering).  You have all earned a few precious summer days off.

August is "bring an intern or student to the meeting" month.  We invite all of you to bring an intern/student to the upcoming meeting so they can do some industry networking and experience our professional organization.  If you have someone who cannot afford to come at the $15 student rate, please let me know so we can assist as part of our NACE mission to develop students in the industry.    If you do not have an intern program at your company please consider it.  We have been fortunate to have a number interns at my property over the past three summers.  These students are coming out of great hospitality programs and are very talented.  I have attended a numer of  "generational" seminars.  In my experience, some of the information about millennials (Generation Y)  is true and some is contrary.  They are said to be educated, confident, goal oriented and capable of multi-tasking.  They are said to be challenged, however, when it comes to being self sufficient because they were overly parented while growing up.  The young men and women I have had the privilege of working with have been directed, committed and mature and are all very independent.  I think they are wonderful.  To me it is a win-win to take on students.  We grow professionally when we become a mentor.  If I have not convinced you yet - you know all of those projects you would like to do but don't have time to complete?  Well, enough said.

Did you make it to the off premise summer meeting at Nicollet Island Pavillion last July?  Mintahoe really put on a show!  On August 5th  we are featuring another incredible home grown Minnesota catering company - Prom Catering.  They will team up with Festivities to share some new decor trend ideas and stations at the Loring Park Community Center.  We always get a great turn out for our summer outdoor event so register now!  In September we are at Sheraton Minneapolis West featuring National Food and Beverage Trend highlights from the Charlotte conference and in October we will meet at Como Park Conservatory for a Chocolate and Spirits Pairing event.  The Programs Committee has it all going on everyone!

Best of summer to you all!
