Recipe of the Month

Champagne Shrimp and Pasta recipe

Ingredients:

8 oz of angel hair pasta.
1 lb of shrimp, peeled and deveined.
2 cups of Champagne.
1 cup of fresh mushrooms, sliced.
1 cup of heavy cream.
3 tablespoons of fresh parsley, chopped.
2 tablespoons of minced shallots.
1 tablespoon of extra virgin olive oil.
¼ teaspoon of salt.
Freshly grated Parmesan cheese.
Salt and pepper, to taste.

Preparation Instructions:

Cook the pasta as directed on its packaging; then drain afterwards.
White the pasta is cooking, heat the extra virgin oil over medium-high heat in a large frying pan.
Cook the mushrooms in the olive oil until tender; then remove and set aside.
Combine the shrimp, Champagne and salt in the pan, then cook over high heat. When the liquid starts to boil, remove the shrimp, then add the shallots. Boil for 8 minutes (until reduced to about half a cup).
Stir in ¾ cup of cream and boil for 2 minutes.
Add the shrimp and the mushrooms to sauce, heating through.
Add salt and pepper.
Toss the hot, cooked pasta with the remaining ¼ cup of cream and the freshly chopped parsley.
Spoon the shrimp with sauce over pasta, and top with Parmesan cheese.

Affiliates are an extremely important part of the success of NACE as an association.
 
Our organization over years has the ability to demonstrate events with not just fantastic food and catering ideas, but to put together “WOW” events covering all of our 5 senses.
 
This is only possible by working closely with our affiliate members. Lighting, Sound, Textures, Décor, Tastes, Smells, and Memories all come together to create an experience we can learn and grow from.
 
Each month we will be spotlighting one our affiliates on “Affiliate Corner” and our monthly meeting. This gives everyone a change to get in front of our members and show the impact we can make on events in the Twin Cities and Greater Minnesota.

President's Report

Welcome in 2009! 

Our Board of Directors met on January 7th for its annual retreat.  The current Twin Cities Chapter board is extremely strong with a return of veterans who are committed and dedicated to your association.  We welcomed Allison Munsell aboard, who will act as our Programs Director, and then got down to work.   As we aligned our goals for this year we realized what a strong foundation Kathy Roberts, our Immediate Past President, has provided for us.  We acknowledge her as a stellar leader and mentor in our profession and thank her again for her work and continued current support.

During challenging economic times like this we see the benefits of our associations more than ever. Our work place business plans reflect back-to-basics philosophies for 2009 - the basics being hard work and maintained relationships.  Our NACE association mission will follow this line of thought.   Our goals reflect the following initiatives.  We have made a commitment to demonstrate return on investment for our companies.  All meetings will entail a strong educational component and there will be an emphasis on connectivity with NACE National benefits and the resources they offer to members.  This year you will also observe more timely communication of the calendar of events and special announcements - including, for the first time, regular newsletters.  We will continue our commitment to communitiy outreach exposure and explore more partnering opportunties with other hospitality industry associations.  In addition we will provide more structured networking opportunities at all meetings.  Finally, it is a goal to expand our grass roots member involvement.  We will do so by forming subcommittees, for the first time, to assist with the larger events and we will provide more survey opportunties for feedback.

We have developed a fantastic programs calendar for the year! Thank you to all of the caterers and affiliates who supported our events in 2008 and those who have stepped forward to offer to host or participate in our 2009 events.  We look forward to showcasing your professional talents and facilities. 

There will be opportunities and blessings that will come in 2009.  The Twin Cities NACE Chapter is growing and we ask for all members active involvement to continue this vitality.

Not only can meeting breaks be a lucrative part of your business events, they can also have a strong effect on overall guest satisfaction. Yet there has been very little consumer research on this important daypart. For example, why do guests gravitate toward certain foods at the break table, but ignore others? What are the differences among various types of guests, and how do those differences affect their food choices? What are the critical non-food aspects of the break? And most importantly, what factors have the greatest impact on overall satisfaction? This intriguing presentation will provide the answers.
